How to make plant based nut milk
Nut Milk is one of the first things I learnt how to make when I studied plant based cooking. It is a staple in my household and it tastes amazing when it’s home-made. You can make nut milk from a variety of nuts, my favourites are: Almond, Cashew, Pistachio and Macadamia. You can also make nut milk from seeds such as Hemp seeds and Pumpkin seeds.
You don’t need to soak your seeds and you also don’t need to soak macadamias.
When it comes to straining your nut milk you don’t need to strain cashews, macadamias, hemp or pumpkin seed milk. However, I like to strain them as I use my milk for lattes and I prefer the finer consistency.

To create a basic almond milk:
You will need:
1 cup of almonds, soaked overnight
3 cups filtered water
1 x nut milk bag
Optional sweeteners:
2 tsp maple syrup
1 tsp vanilla extract
sprinkle of cinnamon
pinch of salt
Method:
Place the almonds and water in a blender
Blend for a minute or so
Drain the milk through a nut milk bag (this makes the basic almond milk, easy!)
Add in the optional sweeteners (I blended mine)

Notes:
Other sweeteners could be: Agave, pitted date(s)
For chocolate milk: 1/4 cup of cacao
For Strawberry milk: 1 cup of strawberries fresh or frozen
For a silkier consistency add in 1tbsp of unrefined, extra virgin coconut oil
You can add in 1tsp of lecithin to hold emulsification if necessary
If you are using a strainer you can keep the pulp, dry it out and make almond meal
